enjoy eats ft. mini yakko

Ingredients needed:

  • 2 15oz can corn, drained

  • 3/4c mini yakko Japanese rice crackers (crush half cup)

  • 3 bacons, diced

  • 1/2 red onion, diced

  • 2TBSP butter

  • 3/4c mozzarella cheese

  • 3/4c jack cheese

  • Mayonnaise mixture:

    • 4TBSP mayonnaise

    • 1TBSP honey

    • 1TBSP hoisin

    • 1/2tsp soy sauce

    • Pinch of black pepper

    • Chopped green onions

    • Rice crackers (Mini Yakko)

    • Furikake seasoning

Instructions:

  • Mix mayonnaise mixture and set aside

  • Mix crushed rice crackers with mozzarella and jack cheeses and set aside

  • In a heated skillet, add bacon and red onions and sweat

  • Add butter till melted

  • Then add in corn and fold in mayonnaise mixture

  • Top with cheese and cracker mixture

  • Cover on med low heat for 5 minutes. Brown top on high with broiler

  • Garnish with furikake, green onions and remaining 1/4c of rice crackers (Mini Yakko)
