Ingredients needed:
2 15oz can corn, drained
3/4c mini yakko Japanese rice crackers (crush half cup)
3 bacons, diced
1/2 red onion, diced
2TBSP butter
3/4c mozzarella cheese
3/4c jack cheese
Mayonnaise mixture:
4TBSP mayonnaise
1TBSP honey
1TBSP hoisin
1/2tsp soy sauce
Pinch of black pepper
Chopped green onions
Rice crackers (Mini Yakko)
Furikake seasoning

Instructions:
Mix mayonnaise mixture and set aside
Mix crushed rice crackers with mozzarella and jack cheeses and set aside
In a heated skillet, add bacon and red onions and sweat
Add butter till melted
Then add in corn and fold in mayonnaise mixture
Top with cheese and cracker mixture
Cover on med low heat for 5 minutes. Brown top on high with broiler
Garnish with furikake, green onions and remaining 1/4c of rice crackers (Mini Yakko)
